Jalapeños Made Easier
One of the worst parts about jalapeños in any dish is prepping them. I usually try and wear prep gloves if I have any, especially if I’m having to cut a few because the oils from the jalapeños can burn your hands and don’t even think about touching your eyes!
What is great about this Smoky Jalapeño Dip is it uses jarred jalapeños: easier to prep and less of a spicy kick but great jalapeño flavor. If you are someone that really loves some kick just sprinkle a few more jalapeños on top after baking.

The best apps are ones that are easy to make
The best part about this dip, besides the taste, is the easy prep. Just dice some bell pepper and onions. Sauté with minced garlic for about 5 minutes then add some corn and cilantro. The bean mixture can be mixed right in the pan or serving dish. Then layer, add cheese on top and bake for 10 minutes and you are done!
Extras on top like more jalapeños, avocados, sour cream, and cilantro can be added. And of course, don’t forget the chips!
Leftover Ideas
In our house, this Smoky Jalapeño Dip didn’t get finished all in one day so it got me thinking about how to repurpose it. One idea is to use it as a filling for a burrito. Wrap the burrito in aluminum foil, place it in a freezer bag, and in the freezer and you’ve got a frozen burrito for a later date when you just don’t feel like cooking.

1 tsp olive oil
1 small red bell pepper, diced
1 small onion, diced
1 tsp minced garlic, minced
1/4 cup jarred jalapeños, roughly chopped
1/2 cup frozen corn
1/2 cup fresh cilantro, roughly chopped
1/2 tsp sea salt
1/4 tsp black pepper
1 cup cheddar cheese, shredded
1 16-oz refried beans
1/2 tsp cumin
1/2 tsp smoked paprika
Directions
- Preheat oven to 350 degrees. Heat large skillet over medium heat.
- Dice bell pepper, onions, and garlic and place in the skillet with olive oil. Sauté for about 5 minutes or until onions are translucent. Add in frozen corn, cilantro, salt and pepper and turn off heat.
- In an 8 x 8 oven safe serving dish or pan add refried beans, cumin, and smoked paprika and mix together. Smooth mixture to cover the pan.
- Layer on veggie mixture and then sprinkle on cheddar cheese.
- Place in the oven and bake for 10 minutes. Remove and add toppings of your choice: avocado, jalapeños, cilantro, sour cream, etc. on top!
